
Precision beyond the pastry: Building for a brand known for its attention to detail.
When a brand has spent years earning a reputation for precision and craftsmanship, every partner involved in bringing that brand to life has a responsibility to uphold those standards. Unita worked with the Lune team to deliver their Pacific Fair store at the Gold Coast, alongside the design team at In Addition.
Lune Croissanterie was founded in Melbourne in 2012 by Kate Reid, a former Formula 1 aerodynamicist who used French pastry to reconnect with herself while battling an eating disorder. She applied her training in aerospace engineering and French pastry to perfect what The New York Times dubbed some of the “best croissants in the world”. This store is their ninth location nationally, and their first at the Gold Coast. The 112 m2 space features a light colour palette, outdoor seating, the iconic hyperdrive light installation embedded into the ceiling, and design details that set it apart.

Another unique feature is an ode to a first-century mosaic from Pompeii. The original Roman work portrays a smiling skeleton with a wine jug in each hand – a reminder to ‘seize the day’, despite the inevitability of death. Working with Mosaic Republic, Unita installed a rendition of the work featuring a skeleton with a coffee and croissant in hand – a reminder that life’s too short to deny the simple pleasures of fresh pastry and a daily coffee. Mosaic Republic is a Melbourne-based artisan studio specialising in bespoke, hand-crafted mosaic. Kate mentioned in an article with Inside Gold Coast, “Second only to the beach, I think it’s going to be the most photographed thing on the Gold Coast.”
An additional key component of this project was the custom-folded glass surrounding the kitchen, designed to give guests a subtle glimpse of movement within the space. The glass is a frosted U-channel glass called Uniprof – an innovative solution that enables light to enter through a curved façade, while still offering privacy. It creates a sense of theatre and intrigue, inviting customers to experience the precision of the craft.
Over the years we have learnt that our interstate visitors can be very loud about wanting a Lune in their city… We were surprised by the level of demand coming from the Gold Coast.

Unita approached the fitout at Lune Pacific Fair with the same commitment to craftsmanship the brand’s reputation is built on. Lune’s croissants are known for their technical precision and meticulous attention to detail, so it was essential that the same philosophy carried through every aspect of the build. From the folded glass, which hints at the theatre within, to the mosaic that prompts a second look, every detail was delivered with the same thoughtfulness Lune brings to its croissants. That’s the brief we hold ourselves to for each fitout: protecting our clients’ brand reputation by upholding an exceptional level of craftsmanship.
